PENNY CARROTS

1 lb of carrots, peeled, rinsed and sliced as thin as a penny (hence the penny carrot)
1/2 stick of butter
1 onion, diced
salt, pepper and white sugar.

melt butter in pan, dice onion add to melted butter, when onions are glossy, add carrots. Add 1 1/2 cup water. Add salt, pepper (to your liking) add 2 tablespoons of sugar. Simmer on stove.

SPAGHETTI PIE

6 oz spaghetti
2 T butter
1/3 cup grated Parmesan cheese
2 well beaten eggs
1 lb hamburger
1/2 cup chopped onion
1 large jar of pasta sauce
1 cup cottage cheese
1/2 cup shredded mozzarella cheese


Cook spaghetti according to package. Stir butter, eggs, and Parmesan cheese into hot spaghetti. Form spaghetti mixture into a "crust" in a pie plate. Cook on high in the microwave for 2 minutes. Brown hamburger and onions ( mushrooms too if you want) and then drain. Stir in spaghetti sauce.

Spread cottage cheese over crust. Fill pie with the sauce/meat mixture. Cook for 7 minutes on high in the microwave. Top with mozzarella cheese and cook for 1 more minute. Let stand for 10 minutes before serving.

TUSCAN SOUP

6 cups chicken broth
1 onion, chopped
3 links Italian sausage
3 large potatoes, chopped
1 bunch fresh spinach, chopped
1/4 cup evaporated milk

Crumble sausage and add chopped onion to the pan. Cook until meat is browner. Drain in a colander.

Place meat, potatoes, and chicken broth in pan. Bring to a boil and cook until potatoes are cooked - approximately 10 minutes. (this does not have to be a raging boil)

Add spinach. Continue to cook until spinach wilts. Remove from heat and stir in evaporated milk. Serve.

SUMMER FRUIT COBBLER

1 and 1/2 cup flour
4 tsp baking powder
1/4 tsp salt
1 cup sugar
1 and 1/2 cup milk (evaporated works well too)
2 T butter
4 cups fruit
1/2 - 1 cup sugar (depending on the tartness of the fruit)

Mix the flour, baking powder, salt, sugar, and milk in a mixing bowl.  As you preheat the oven to 350 degrees, melt the butter in a 13 X 9 pan.  As soon as the butter has melted, remove the pan from the oven.  Pour the batter into the pan but DO  NOT STIR.  Layer fruit on top and sprinkle with added sugar.  Bake for 45 minutes.  It's good served with whipped cream but also wonderful just plain and even good for breakfast.

GREEN CHILIES AND CORN CASSEROLE

1 8 oz block of cream cheese or neufchatel cheese
2 16 oz cans of corn, drained
1 6 oz can of chopped green chiles

Soften cream cheese and then stir in corn and green chiles until well mixed.  Spread in a PAM sprayed pie plate.  Cover with foil and bake for 30 minutes at 350 degrees.
